Banana Muffins

3 Bananas4-5 Strawberries (Preferably Organic)3 TBSP Honey1/4 c. Sugar1/2 tsp. salt1 tsp. Baking Powder1 tsp. Baking Soda1 Large Egg, slightly beaten1/3 c. Melted Margarine or Butter1 1/2 c. Flour
Preheat oven to 350 degrees Fahrenheit.
Cut bananas into pieces and put into blender with strawberries. Blend until smooth. Mix with honey, margarine, and slightly beaten egg.
Sit to the side and mix remaining dry ingredients in separate bowl. Combine dry mix with wet ingredients, just until mixed well. Don't over beat, because this will make your muffins more dense. The batter should still be relatively lumpy.
Spoon into muffin pan that is either greased or has paper liners. Fill them approximately 3/4 of the way full. ( About 2-3 heaping spoon fulls. )
These make a fruity but less sweet muffin. If you like your muffins sweeter, add more honey or another substitute.
