Spicy Cucumber Dip

2C finely chopped Cucumber (seeded)1/2C finely chopped Tomato (seeded)1/4C finely chopped red onion2Tbls finely chopped parsley1 finely chopped Jalapeno (seeded) 4 1/2tsp finely chopped Cilantro1 clove of garlic mincedSauce1/4C Plain Greek Yogurt1 1/2tsp Lemon juice1 1/3tsp lime juice1/4tsp ground cumin1/2tsp sea salt (or less - to taste)
Finely chop all ingredients together in bowl (be sure to use a glass or ceramic bowl or plastic, not a metal bowl as there is citrus in it)
Mix together all Sauce ingredients and pour over chopped veggies. Gently stir together. Let sit over night to allow flavors to blend together. Serve with baked tortilla chips, on chicken or fish, as a salad, with chopped veggies or any other way you wish.
