The Conscious Cookie Oatmeal Raisin Cookies

Ingredients
1/2 cup Earth BalanceŽ Natural Buttery Spread (soy free)1/2 cup plus 2 Tbs. Organic Coconut Sugar1 large Banana, mashed (optional)3 Egg Whites, or equivalent1 Tbs. Vanilla Extract1 scoop Raw Vegan Vanilla Protein Powder1/2 cup Gluten Free Baking Mix (I used homemade)3 Tbs. Coconut Flour1 tsp. Xanthan Gum1 Tbs. Ground Cinnamon1 tsp. Baking Soda1/2 tsp. Salt3 cups Gluten Free Rolled Oats (not instant)1/4 cup Organic Raisins
Directions
Preheat oven to 350°F.
Cream together buttery spread, coconut sugar and mashed banana (if using) until well blended (it will look almost curdled). Add eggs and vanilla, beat well.
Stir together protein powder, baking mix, coconut flour, xanthan gum, cinnamon, baking soda and salt. Stir into wet ingredients. Add oats and raisins, and mix well.
Drop by 1/2 tablespoon sized scoops onto baking sheets, about 2-inches apart. Bake 5 to 7 minutes.
Cool 1 to 2 minutes, then transfer to a cooling rack.
