Engine 2 Diet Mushroom Stroganoff

Ingredients
1 large yellow onion16 oz sliced or diced mushrooms4 cloves minced garlic4 TBL whole wheat flour3 TB balsamic vinegar1/2 c milk substitute (I used 1 cup)Thyme to taste16 oz cooked whole wheat fettuccini noodlesI also added about 1/2 cup mushroom broth and 1/4 cup nutritional yeast for more depth & body.
Directions
Cook onion in nonstick skillet till translucent, add musrooms and garlic. Cook until mushrooms release their liquid and sprinkle flour over. Stir Constantly until flour dissolves, then add vinegar and milk and stir. I added the nutritional yeast and more seasoning and then served.

Serving Size: Makes 3-4 servings, with pasta leftover
