Greek Quinoa Spinach Salad

Ingredients
1/4 cup olive oil3 T. red wine vinegar1 t. dried oregano1 cup dried quinoa2 cups water1 cup cherry tomatoes, halved1 cup cucumber with peel, cubed2 cups (packed) fresh spinach1/4 cup red onion, diced fine1/3 cup feta chesse
Directions
Mix oil, vinegar (red wine), and oregano to make dressing. Set aside. Make quinoa according to package directions (just like rice) using water. Mix vegetables and feta cheese in large bowl. Cool quinoa thoroughly. Mix in cooled quinoa and dressing. Allow to sit in refrigerator to meld flavors. Add salt and pepper to taste.
