Cranberry Cilantro Quinoa Salad

Ingredients
Whole Grain Quinoa, , 1 cup 1 1/2 cup water *Bell pepper - red, 1/4 cup *Bell pepper- yellow 1/4 cup Onions, raw, 1 small , chopped Curry powder, 1/2 tsp Cilantro,1/4 cup, chopped *Lime, Fresh 1 medium, juiced Almonds, 1/4 cup, sliced Carrots, 1/2 cup, chopped Cranberries, dried, 1/4 cup salt and pepper to taste
Directions
Boil water in a covered saucepan. Add quinoa, cover and simmer for 15 to 20 minutes. Drain, put into a bowl and refrigerate until cold. Add the rest of the ingredients and mix well. Chill before serving.
