Flaxseed Granola

Ingredients
Flaxseed, 4 cup Cinnamon, ground, 1 tsp Ginger, ground, 1 tbsp Vanilla Extract, 1 tbsp Raisins, 1 cup, packed*Sun Maid, California Chopped Dates, 0.5 cup Pumpkin Seeds, 0.25 cup
Directions
Mix flaxseeds with water seasoned with cinnamon and other spices and refrigerate overnight. Spread in a thin layer on a baking sheet and bake at 275 degrees F for 50 minutes to 1 hour, turning several times to dry out. Add raisins, dates and pumpkin seeds (or other nuts and dried fruits of choice) in the last 10 minutes.
