Shauna's Eggplant Lasagna

Ingredients
1 eggplant1 green pepper1 onion1 package portabellos1 package baby spinach1/2 package ground turkey2 jars marinara8 wedges light garlic and herb cheese spread2 tbsp grated Parmesan
Directions
Brown turkey and add marinara
Coat bottom of pan with marinara
Layer 1/2 of vegetables (all sliced)
Add 1/2 remaining sauce mixture and 4 wedges of cheese, crumbled. Repeat with other half.
Baked on 350 for 30-45 minutes.
