Apple Cinnamon Streusel Muffins

Ingredients
1 1/5 cups oat flour1/4 cup soy flour1 1/2 tsp baking powder 1/2 tsp baking soda1/2 tsp salt 1 tbsp cinnamon6 tbsp ground flax3 tbsp hemp protein2 eggs1/2 cup brown sugar1/2 cup almond milk (or soy)1 cup applesauce1 cup chopped apples (approx 2 small apples)For the topping: Reserve a few tablespoons from the 1/2 cup brown sugar and stir together with 1-2 tbsp quick oats and 2 tbsp chopped pecans or desired nut or seed.
Directions
Preheat oven to 350 F

Mix together Flours, baking podwer, baking soda, salt, flax, cinnamon and protein in a large mixing bowl. In a separate bowl mix most of the brown sugar, 2 eggs, milk and applesauce. Stir into to the dry mixture until fully combined and fold in the apples.

Line or grease a muffin pan and spoon into 12 holes. Sprinkle the topping over each just before putting into the oven. Bake for 15-20 mins.

Serving Size: Makes 12 generously sized muffins
