Paleo Lemon Poppy Seed Muffin

Ingredients
1/2 cup coconut flour6 Large Eggs1tsp salt1tsp baking soda1 T poppy seeds1/2 cup coconut oil melted (or olive oil)1/2 cup honey or agave nectar2 T lemon zest1 T lemon juiceMix dry ingredients in small bowl. Mix eggs, oil, honey, lemon zest and lemon juice in larger bowl. Add dry ingredients to egg mixture. Fill muffin cups about 3/4 full. Should yield 12 muffins.
Directions
Bake at 350 degrees for 30 minutes
