4 1/2 cups - 1-inch chunks small new potatoes (About 1 1/4 pounds)1/4-1/3 cup - Fresh Parsley, finely chopped1/2 tbsp - Extra-Virgin Olive Oil1 tbsp - Butter1/4 tsp - salt
Place potatoes in a 4-quart pot and cover with water.
Bring to a boil over high heat. Reduce heat to medium and cook for about 12 min. or until the potatoes are tender.
Drain the potatoes and return them to the pot.
Add the parsley, olive oil, butter and salt to the potatoes and toss to mix well. Serve hot.
