Egg White and Turkey Scramble

8 egg whites1 pound lean ground turkey or tofu2 cups shredded spinach2 tomatoes1 clove garlic, minced or pressed through garlic presssea salt and black pepper to taste
1. Cook ground turkey or tofu in a medium skillet until cooked through and lightly browned. Drain excess juices from pan. Place turkey in a bowl to set aside (pour boiling water over cooked turkey and drain for totally fat free turkey)
2. Wipe pan clean with paper towel. Scramble egg whites until dry. Add scrambled eggs to cooked turkey.
3. In a small skillet coated with cooking spray, saute tomatoes, spinach and garlic.
4. In a large skillet or bowl combine all ingredients and mix until evenely distributed. Season with salt and pepper and serve immediately.
Makes 6 1-cup servings

I have the cookbook and made this recipe for dinner since I had leftover egg whites. I substituted Lightlife Smart Ground Original for the turkey and used pico de gallo instead of the chopped tomatoes. I ate with a whole wheat tortilla and a side of cherries. Yum! Will definitely make again! - 6/2/09
