Apple Flax & Oat Muffins

Ingredients
1/4 cup Flax Seed3/4 cup Oat Flour3/4 cup White Flour1/2 cup sugar2 tsp. baking powder1/2 tsp Baking Soda1/2 tsp Salt1 tsp Cinnamon1 Egg beaten1 1/2 cup finely chopped apples3 Tbsp vegetable oil1/2 cup milk1/2 cup chopped nuts (optional)
Directions
Blend dry ingredients together in a bowl. In a separate bowl, combine egg, oil and milk. Add dry ingredients and stir until just blended. Fold in apples and nuts. Batter will be thick. Fill well
greased muffin pan 2/3 full. Bake at 400 for 18 to 20 minutes. Makes 12 muffins.
