lemon ginger shrimp

Ingredients
1 pound raw shrimp (I use previously frozen)3 T. olive oil1/4 c. lemon juice1/2 c. grated ginger3 large cloves or 4 med. garlic, diced
Directions
heat oil over med.
add garlic, ginger and lemon juice, heat to simmer
add shrimp, stir and simmer until shrimp is cooked about 3-4 minutes

Serving Size: makes 3 servings, I serve this over steamed spinach and sprinkle with fresh parmesian
