Terri's Italian Chicken and Rice

Ingredients
2/3 cup biscuit/baking mix1/3 cup grated Permesan cheese2 tsp Italian seasoning (thyme, oregano, rosemary, basil)1 tsp paprika4 oz. skim milk6 bonelss skinless chicken breast halves2 cups of boiling water with 2 tsp chicken bouillon2 Tbls melted Smart Balance Lite Buttery Spread
Directions
In a large plastic bag or shallow bowl, combine first four ingredients. Place 1/3 cup of milk in another bowl. Dip chicken in milk, then coat with the cheese mixture.

Cook brown rice as directed on the package until half way cooked or use instant brown rice.

In a greased 13"x9"x2" baking dish, combine water, bouillon, rice, and remaining milk; mix well. Top with chicken. Drizzle with butter. Bake, uncovered for 25-30 minutes or until the rice is tehnder and chicken juices run clear. Enjoy!
