JC's Swiss Chard & Goat Cheese Omelette (large)

Ingredients
3 eggsgoat cheese, red pepper, red onion, & swiss chardcurry powdersalt and pepperteaspoon olive oil
Directions
Chop the vegetables. Saute the onions and peppers in the olive oil. Allow to saute until onions grow slightly translucent. Stir as necessary. Then add the swiss chard and allow to soften. In a bowl, add the eggs and whisk. To the vegetables, add the curry powder and mix. Add the eggs and cook as you prefer for an omelette. Add the salt and pepper. Top with goat cheese and fold over. Makes enough for 2 people.
