Guacamole Salad

Ingredients
1 Avocado (Ripe-Haas) mashed2 cloves minced garlic1/4 cup finely chopped onionsJuice of 1/4 lemondash of salt1/2 Red Ripe Tomato chopped
Directions
Mash 1 ripe peeled and de-seeded avocado in bowl with potato masher.
Add 2 cloves minced garlic
Add 1/4 cup finely chopped onions
Squeeze juice of 1/4 lemon over ingredients
Add dash of salt
Mix together
Fold in 1/2 chopped Red Ripe Tomato

Can be served with Tortilla Chips...(recommend Trader Joe's Soy & Flaxseed Tortilla Chips; low in calories, fat, high in protein and fiber.
