1 cup rolled oats2 cups water2 T olive oil1 t mustard seeds5-8 fresh curry leaves1 medium onion, diced2 plum tomatoes, diced5 medium mushrooms, sliced1 fresh Thai chili (optional)1/2 t turmeric1/2 t red chili powderSalt to taste
Saute mustard seeds and curry leaves in oil. When they sputter add onions and ginger for a few minutes. Add mushroom, tomatoes. Add oats and water. Add salt, turmeric and chili powder. Lower heat, cook covered for 10-15 minutes depending on how you like your oats cooked.
