Whole Wheat Penne with Crispy Cauliflower

Ingredients
3 tablespoons extra virgin olive oil, divided½ (12 oz) package cauliflower florets (2 cups)¼ teaspoon salt¼ teaspoon pepper6 oz whole wheat penne pasta¼ cup freshly grated Parmesan cheese
Directions
Heat 2 tablespoons oil over medium heat in a large skillet. Add cauliflower; cook 10 minutes or until tender and browned, stirring occasionally. Season with salt and pepper. Cook pasta according to package directions; drain, reserving 1 cup pasta water. Add pasta to cauliflower in skillet over medium-high heat. Add pasta water, a little at a time, stirring to prevent sticking. Drizzle with remaining 1 tablespoon olive oil. Sprinkle with cheese before serving.
