Balsamic Roasted Vegetables

Ingredients
Onions, roughly chopped, x 2Cherry Tomatoes, 1 cupRed Pepper, chopped, 1 cup, Garlic, chopped, 3 clovesParmesan Cheese, shredded, 2 tbspBalsamic Vinegar, 2 tbspMushrooms, 1 cup, wholeOlive Oil, 1 tspEggplant, cubed, 2 cups
Directions
Mix all ingredients together except cheese and lay evenly in a roasting dish.

Bake for 30-35 minutes in a moderate oven.

Remove from oven, sprinkle parmesan on top, return to oven for another 5 minutes.
