Lentil Stew

2 cups green lentils 1 bunch kale, trimmed and stems discarded 2-3 medium tomatoes, chopped 3 cloves garlic, diced 1 tbsp olive oil 2 tbsp soy sauce, tamari, or Bragg’s liquid aminos 1 tsp salt ¼ tsp cayenne (to taste) 1 ½ tbsp cumin
In a stock pot, soak lentils in water for 20-30 minutes (do not turn stove on yet) . After soaking, add more water if needed (water should be about 2 inches above the lentils.), then simmer for 20 minutes. Add garlic, olive oil, soy sauce, salt, cayenne (optional), and cumin and let simmer again for another 20 minutes. Then add kale and simmer about 20 more minutes, before finally adding the tomatoes. After adding tomatoes, simmer for about 10 more minutes. Almost all of the liquid should be cooked off at this point. Salt to taste and serve. Goes well with a dollop of Vegenaise (optional).
