Nina's ISOMORPH Protein Banana and Walnut Muffins

Ingredients
Directions
Dry ingredients:-1 cup oat flour (I make this by putting oats in a blender)-1/2 cup quinoa flour- 2 scoops vanilla isomorph protein powder- 1/2 cup chopped walnuts- 1/4 cup cooking sweetener (Natvia/stevia)- 1 tblsp psyllium husk- 1 tsp baking powder- 1 tsp cinnamon- dash of nutmeg-pinch of saltWet ingredients:- 3/4 cup egg whites lightly beaten- 3 small ripe bananas mashed - 1/2 cup organic baby food apple sauce- 1 tblsp sunflour oil- 2 tblsp low fat Greek yogurt ( optional)Frosting:-1/2 cup low fat cream cheese (Philadelphia)- 2 tblsp natural peanut butter- 1 tblsp choc proto whey (optional)- 1 tblsp raw cocoa powder-1/4 cup sugar free maple syrup
Method:
In a large bowl combine all dry ingredients and mix well
In a smaller bowl add egg whites and mix bananas through before add remaining ingredients
Combine the wet and dry ingredients together And mix until smooth
Line a muffin tray with paper muffin cups (you dont really need a muffin tin just use muffin cups) and Spoon the mixture in 3/4 of the way.
Bake in the oven on 180 degrees for 20-25mins
Take out and Leave on a rack to cool for 10minutes before frosting.
Frosting:
Combine all ingredients until smooth. Refrigerate until muffins are cooled then add on top. Add walnuts or banana slices on top for decoration.
Serving Size: Makes 16 Muffins - serving is 1 muffin
