Chicken and Black Beans Casserole with Mole Sauce

1000 gr Chicken or turkey 1 Large Bell Pepper - chopped3 Roasted Garlic cloves1 Cup Black Beans (can - drained and rinsed)300 gr Cabbage (chopped)1 Cup Yellow corn1 Can Diced Tomatoes1 large onion Mole sauce and chile spice to your liking
1. Heat the garlic in a pan and add 1/2 Can tomatoes (other is for the mole sauce) Saute the corn, beans, pepper, onion.
2. Meanwhile chop the cabbage. And cover the bottom of casserole dish.
3. Remove from heat. Pour over cabbage.
4. Prep the black beans and cabbage. Set aside
Mix in the chicken
6. Spray the bottom of a baking dish with non fat cooking spray.
7. Pour Mole Sauce over
8. Bake in a preheated 350F oven until the sides are bubbling, about 20-30 minutes.
10. Serve garnished with salsa and guacamole (not in calculation and a side dish of rice (optional - not in calculation).
