Balsamic Roast Beef

1 tablespoon olive oil1 lb boneless chuck roast1/2 teaspoon pepper1/4 teaspoon salt1 cup beef broth1/2 cup red wine2 tablespoons balsamic vinegar1/2 cup chopped onion2 cloves garlic, minced
Heat oil in a large nonstick skillet over mediumhigh
heat. Rub beef evenly with pepper and
salt. Add beef to pan; cook 2 minutes per side
or until browned. Place beef in a 3- or 4-quart
slow cooker. Add broth, wine, vinegar, onion
and garlic. Cover and cook on Low 6 hours or
until tender.
