Buttermilk Oven-Fried Chicken Tenders

1/2 cup low-fat buttermilk1 egg white12 oz chicken tenderloins3/4 cup whole wheat panko breadcrumbs1/2 teaspoon kosher salt1/2 teaspoon garlic powder1/2 teaspoon paprika1/4 teaspoon black pepper1/8 teaspoon cayenne pepper (optional)
Combine buttermilk and egg white in a shallow
dish; whisk until blended. Add chicken; turn to
coat. Let stand 15 minutes. Preheat oven to
400 degrees. Combine breadcrumbs, salt,
garlic powder, paprika, black pepper and
cayenne pepper (if using) in a shallow bowl.
Remove chicken from buttermilk mixture,
allowing excess buttermilk to drip off. Coat
chicken in breadcrumb mixture, pressing gently
to adhere. Place chicken on a rack in a broiler
pan. Bake 16 to 18 minutes or until chicken is
done and coating is browned.
