Easy Stirfry

1 Large Baby Zucchini1/2 Green Pepper, chopped1/2 Red Sweet Pepper, chopped1/2 cup of onion (I suggest spanish onion)3/4 cup Portabella Mushroom chopped1.5 cups Brown Rice - cooked2 tbsp Olive Oil3 tbsp Soy Sauce
1. Cook brown rice as indicated on it's package. Set aside.
2. Heat stir fry pan and olive oil on a medium temperature until oil runs easily. Add all vegatables.
3. When vegatables start to appear slightly golden (it's easiest to watch the zucchini do this) add 1.5 cups of rice and soy sauce.
4. Mix until soy sauce is absorbed in the rice and vegtables look fully cooked.
Makes approx. 3 servings.
