Chickpea (Garbanzo) "Stew" over Couscous

Ingredients
3 C. prepared plain couscous1.5 tbsp. olive oil1/2 small onion, chopped2 cloves garlic, chopped1 16 oz. can chickpeas, drained and rinsed1 16 oz. can chopped, stewed tomatoes1/2 tbsp. cumin
Directions
Pour olive oil into bottom of medium size saucepan. Heat and then add the onion and garlic, cook until onion begins to soften. Pour in tomatoes and chickpeas, and stir in cumin. Allow to simmer 15 minutes, stirring occasionally. Excess water from tomatoes will boil off, so don't cover it! Serve over couscous. Delicious, a great substitute for carb-heavy and less nutritious pasta! Makes 4 servings, 3/4 cup couscous and 3/4 cup "stew."

    This was very nice . I did make my own stewed tomatoes (from a fantastic recipe on allrecipes) and I cooked my couscous with home made broth instead of plain water. I also followed suggestions to add cayenne and curry, yum!! - 3/21/12
