Stacey's Granola Bars

Ingredients

2 cups rolled oats1 cup heavy cut oats1/2 tsp cinnamon1/8 tsp salt1/4 cup raw almonds1.5 Tbsp olive oil1/3 cup pure maple syrup1/4 cup honey 1/4 cup water
Preheat oven or toaster oven to 350 degrees F.
Process 2 cups rolled oats in blender or food processor until they become flour-like. Mix "oat flour" with dry ingredients in a bowl.
Add all wet ingredients to the dry mixture and stir until well combined.
Spray a small baking dish (about 8 inches x 12 inches, or similar) with non-stick cooking spray. Add mixture to the dish, pressing it down with a spatula or fork.
With an oiled knife, cut the whole sheet into 15 bars. Bake at 350 degrees for 20-30 minutes, or until slightly browned. Let cool, cut again, and store in an air-tight container for up to one week.

These are great! Perfect amount of cinnamon, and the maple syrup is a very nice touch! I toasted my slivered almonds first. I'm making these for DH to travel with on business and I didn't want any crumbs, so I sprayed 12 muffin cups! Each one got a scant 2T - perfect, and nice edges all around! - 2/15/11
