Ingredients
1 medium eggplant (1 - 1-1/4 lb)cooking spraysalt & pepper to taste
Directions
wash and slice egg plant into approximately 6, 1 inch slices. Lightly spray with cooking oil spray of your choice. Lightly salt and pepper. Place on grill cover and cook approximately 4 minutes, turn, cook another 4 minutes or until tendered yet stays firm, in one piece when lifted.
