Chicken Piccata with Capers

2 5 oz. chicken breasts, flattened1/4 cup all purpose flour1 Tbs. olive oil1 Tbs. light margarine spread1/2 cup chicken broth1 freshly squeezed lemon3 Tbs. capers, drained
1. Season chicken breast with salt and pepper. Place flour in a shallow bowl and add chicken, turn to coat.
2. Heat margarine and oil in a large skillet over medium high heat until very hot but not smoking. Shake excess flour from chicken and place in hot skillet; cook 2-3 minutes per side or unti nicely browned. Remove from skillet and keep warm.
3. Add chicken broth and lemon juice to pan drippings in skillet (you can add a little flour a little at a time if you want a thicker sauce). Scrape bottom of skillet to loosen and combine any browned chicken bits.
4. Return chicken to skillet with sauce, reduce heat to medium and simmer 3-5 minutes, uncovered, until chicken is done and mixture thickens slightly. Add capers and serve.
