Spinach & Rice

Ingredients
2 Tbs olive oil1 cup onion chopped1 lbs frozen chopped spinach1 cup tomato sauce4 cups water2 cups uncooked rice8 Tbs butter
Directions
Heat Olive Oil in large pot, add onions. Cook until onions are soft. Add spinach and tomato sauce cook 1 to 2 mins until spinach is thawed. Add water and rice season with salt pepper and dry or fresh dill. Bring to a boil, turn heat to low. Cover and cook on low for 20 to 30 min or until water is absorbed. In a small pan brown 1 stick of butter, once browned add to spinach and rice mixture. Mix well. Makes 8 1 cup servings
