Lentil Taco Filling

Ingredients
1 cup of lentils1 cup diced onion1 clove garlic1 tbsp chili powder1 tsp oregano2.5 cups chicken broth1 cup salsa1 tbsp extra virgin olive oil
Directions
Saute the onion and garlic in the olive oil. Rinse the lentils, drain, and add them to the onions and garlic. Add the spices and cook for about a minute. Add chicken broth and bring to a boil. Cover and let cook for about 30 minutes. Remove lid and allow to thicken for a few minutes. Stir in the salsa. Scoop into taco shells and enjoy!
