Pumpkin Coconut Protein muffins

Ingredients
Reserve 2 Tbs of coconut and 2 Tbs of walnuts for topping. Can mix with 2 Tbs of brown sugar if you like.
Directions
Mix remaining dry ingredients and mix wet ingredients in a separate bowl. Combine until just moistened. Use an ice cream scoop to fill 12 muffin liners. Evenly top with the reserved coconut and walnuts. Bake at 375 for 20 min. Cool on a wire rack.
