Stuffed Bacon Wrapped Chicken

Ingredients
4 Boned and skinned chicken breasts 8 Slices BaconGoat cheese with chives and garlic(make your own, or buy cream cheese already done for you!) (1-2 TBL per breast)
Directions
Pound breasts to 1/2 inch thickness
Plop 1- 2TB of cheese mixture in center
Wrap up like a ball and then wind the bacon strips around the breast
Secure the wrap with toothpicks

Bake uncovered for 35-40 minutes (or until juices run clear) at 400 degrees.Turn on the broiler and broil six inches from the heat for 5 minutes or until the bacon is crispy.

    The family suggested a different cheese might be better. I don't think so. The Chevere was nice and subtle and helped the fresh garlic and chive stand out. The higher quality the bacon, however, the better. - 5/25/13
