Tomatoe Chick Pea Soup

Ingredients
1 onion - chopped2 stalks Celery - diced1 red pepper - 1/4inch long thin slices1 can Chickpeas1 can diced low sodium Tomatoes1carton low sodium Vegetable Broth 1tbsp Curry Powder2tbsp Red Wine Vinegar1/2tsp Cumincoarse sea salt & pepper to taste
Directions
Saute onions,celery & red pepper in small amount of olive oil & the red wine vinegar.
Add Chickpeas. sautee a few mins
add diced tomatoes & curry powder, simmer a few minutes
Add broth & cumin, sea Salt & pepper. Bring to a boil the reduce heat to minimum.
Simmer for 45-6mins
