Thai Chicken

Ingredients
2 chicken breasts2 T. olive oil4 oz. onion, chopped or sliced (yellow, white or red)1 large jalapeno, stemmed, seeded and chopped1 red pepper1 clove minced garlic½ tsp. minced ginger root1 tsp. Thai fish sauce1 tsp. soy sauce¼ tsp. garlic chile paste (I use Sambal Oelek)½ c. fresh cilantro, coarsely chopped½ c. chicken brothPinch of your preferred thickener (optional)¼ c. green onion, chopped (optional)
Directions
Brown both sides of chicken breast in olive oil. Remove and cut into pieces. Add onions, jalapeno, red pepper and garlic to pan and saute until onion is clear. Mix minced ginger, fish sauce, soy sauce, chile paste and chicken broth in a bowl and add to saute vegetables. Add chicken pieces, cilantro and green onion and simmer for about 10 min.
