Apple Cinnamon Raisin Oatmeal Muffins

Ingredients
1/2 cup oat flour1 cup quick oats1/4 tsp salt1/2 tsp baking soda2 scoops vanilla whey powder1 tsp cinnamon (or to taste)1/2 cup Splenda1 cup applesauce, unsweetened4 egg whites1/3 cup water1/4 cup raisins2 medium apples, roughly chopped
Directions
1. Whisk together all dry ingredients.
2. Whisk together all wet ingredients
3. Add wet to dry ingredients and stir until combined.
4. Stir in apple chunks.
5. Spoon mixture into muffin tins greased with olive oil, or other healthy fat/oil of your choice.
6. Top each muffin with the raisins, dispersing evenly.
7. Bake for 25-30 minutes in preheated 350 degree oven.
8. Enjoy!

Serving Size: makes about 12-14 muffins, depending on how full you stuff the tins
