Mini Goat Cheese Pizzas

1 whole wheat english muffin1 oz goat cheese (crumbled)2 tablespoons pizza sauceoptional ingredients include: pineapple, veggies, healthy bits of leftovers in the fridge.
preheat oven to 350 degrees.
toast the english muffin (the more toasted the crispier crust).
cover a baking sheet with aluminum foil.
place english muffin halves on foil inside up.
add sauce, then cheese and toppings.
bake in the oven for 5-10 minutes or until cheese starts to look melted and a tad browned at the edges. (note: goat cheese crumbles will not melt down, i've found out that 10 min is about the perfect time, and when they come out i kinda spread the cheese with a spoon a little to cover the muffin). if you don't like goat cheese you can use any cheese you like!
