Tomato and Spinach Couscous Salad

1 cup uncooked whole wheat couscous1 cup cherry tomatoes, halved1 cup packed baby spinach, coarsely chopped2 tablespoons chopped fresh chives¨ö teaspoon grated lemon rind1¨ö tablespoons fresh lemon juice1 tablespoon olive oil¨ù teaspoon salt¨û teaspoon pepper
Directions
Cook couscous according to package
directions; cool (save 1¨ö cups cooked
couscous for Meal 6). Combine remaining 1¨ö
cups cooked couscous, tomatoes, spinach,
chives, lemon rind, lemon juice, olive oil, salt
and pepper in a large bowl. Toss gently.
