Roasted Red Pepper and Goat Cheese Alfredo

2 Bonless Skinless Chicken Breasts, grilled1 box fettuccini, whole grain recommended2T olive oil3 cloves garlic minced1t crushed red pepper flakes1 14oz. jar roasted red peppers, drained and chopped1 14oz. can fat free evaporated milk4oz. goat cheese4oz. low fat cream cheese1/2c freshly grated parmesan cheese1/2c chopped basil
Cook the pasta according to package directions. Grill the chicken. While the pasta and chicken cook, make the sauce.
For the sauce: heat the olive oil over medium heat add the garlic and crushed red pepper flakes and cook until the garlic is tender. Add the roasted red peppers, milk and cheeses stirring occasionally. When the cheeses are melted use a hand blender, blender or food processor and blend the sauce until smooth. Add the basil, chicken and toss then top the pasta and enjoy.
Serving Size: Makes about 7 one cup servings
