Breakfast Balls

Ingredients
1 large potato, grated1/4 onion, chopped3 slices bacon cut into small pieces2-3 eggsbreadcrumbs (optional)Olive Oil
Directions
Grate potato, sandwich the gratings between paper towels and plates, put in the fridge overnight with a weight on top (1 gallon jug of water works well) or squeeze dry as much as you can (or use a potato ricer to squeeze out the juices)
Cut bacon into little bits
Chop onion
Mix potato gratings, bacon and onion.
Salt and Pepper to taste.
Scramble and add in eggs one at a time until things start to stick together.
Form into tablespoon size balls.
Roll in breadcrumbs(optional)
Drop into hot oil.
Cook until golden brown.
Scoop out with a slotted spoon and set to drain on paper towels.

Serving Size: makes 3-5 balls
