1/2 cup chunky peanut butter1/2 cup packed brown sugar2 tablespoons unsalted butter1 egg1-1/4 cups quick-cooking oats1/2 teaspoon baking soda1/4 teaspoon salt1 tsp vanilla extract
In a small bowl, cream peanut butter, butter, vanilla extract, and brown sugar until fluffy. Beat in egg. Add oats and baking soda to creamed mixture; mix well.
Drop by tablespoonfuls 2 in. apart onto greased baking sheets; flatten slightly. Bake at 350° for 6-8 minutes.
