Salsa-Tofu Breakfast scramble

Ingredients
1 tsp extra-virgin olive oil1/2 sweet onion, chopped2 clove garlic, minced1/2 c crumbled extra-firm tofuPinch of saltPinch of freshly ground pepper1/2 c Spinach1/2 c Green Peppers, chopped1/4 tsp Pepper, red or cayenne( more or less to taste)1 tsp ground turmeric2 tbsp Daiya, Cheddar Style cheesesalsa to taste
Directions
Heat oil in a small nonstick skillet over medium-high heat. Add onion and cook,until soft, add garlic, bell pepper, tofu and spices, cook untill peppers are soft and tofu is hot, toss in spinach and cook around 2 more minutes. top with vegan cheese and salsa
