Chicken Teriyaki Stir-Fry w/ Soba Noodles

1 pkg Roland soba noodles1 pkg chicken breast (approx 1 lb)1 8-oz can sliced bamboo shoots, mostly drained1 8-oz can sliced water chesnuts, mostly drained1 bag Birds Eye Sugar Snap Stir-Fry frozen veggies3/4 Cup teriyaki sauce1/4 Cup low sodium soy sauce
Cook noodles according to package directions. Separate into single servings.
Cut up chicken into bite size pieces. Cook in large pan or wok on medium heat with 1/4 C of teriyaki sauce. Cook until done. Add bamboo shoots and water chesnuts and allow to cook for approx 5 minutes. Add bag of frozen veggies, and cook covered until just unfrozen. Add remaining teriyaki sauce and soy sauce and heat thoroughly.
Spoon over soba noodles.
Can be served with additional soy sauce (but I didn't think it needed any).
Serving Size: Makes 6 servings
