Cold Chicken Salad

Ingredients
NOTE: If you or your guests are allergic to nuts, you can omit that ingredient. You can also substitute craisins or raisins instead of red grapes but the carbs will increase as a result. I prefer real mayonnaise because I feel it is creamier, even the lite version.
Directions
saute the chicken breast in 1-2 cups plain water, add seasonings of choice. I use light salt, pepper and sometimes a dissolved low sodium chicken bouillon cube to the water. Discard water after chicken has been thoroughly cooked. The remainder of the ingredients can be chopped and diced while chicken is cooking. When chicken has cooled, chop that and add to the other ingredients. Cool for 1 hour minimum before serving.
