Mini quiche

Ingredients
2 C cottage cheese non fat lucerne3 C fresh spinach2 C mushrooms1 C chopped peppers (red, yellow, orange)1 C red onion2 C artichoke hearts (drained of oil marinade & rinsed)1.25 pie crust - pre-made- roll out thinner
Directions
Stir fry all veggies, add cottage cheese and egg mix. Roll out pie crust thinner to yeild 12 rounds. Spray bottom of quiche pan. Put crust is bottom of pan, add liquid to top. Bake at 365 for 25 minutes or until crust and top start to turn brown.
