Spaghetti Squash, 2 med sizeZucchini, sliced - 3 medKale, 1 small bunch*Extra Virgin Olive Oil, 3 tbsp Sesame Oil, 1 tbspCoconut Oil, 1 tbsp.*Eating Right Tomato Basil Pasta Sauce, 2 jars*Sausage - Open Nature Mild Italian Chicken Sausage - 1 pkg*Open Nature 100% Natural Smoked Andouille Chicken Sausage, 1 pkg
Cook squash in oven at 375 F for 1 hour or until skin is soft. Set aside.
Put coconut oil and sesame oil in pan and sauté zucchini to desired done-ness. Set aside.
Lightly coat kale with olive oil, salt, and pepper. Saute briefly then add water to pan to braise kale.
Assemble each serving:
Spaghetti squash, zucchini, kale, pasta sauce, and top with sausage.
Serve.
