Stuffed Cheese Rounds

Ingredients
7 ounces Gouda or Edam cheese ½ cup sour cream2 tbsp milk 1 tsp snipped chives2 tbsp pecans, chopped 1 green, or red, apple, sliced
Directions
Let cheese come up to room temperature. Cut a ½ inch slice from the top of the round to remove wax. Carefully scoop cheese out of the round leaving a ½ inch in shell. Scallop the edges of the shells using a sharp knife and a ½ inch diameter metal cookie cutter if desired. Set shell aside. Place cheese pieces, sour cream, milk, and chives in a blender container or food. Cover and blend until smooth, stopping occasionally scrape down sides. Stir in the pecans. Spoon cheese mixture into shell. Place stuffed cheese round on tray. Refrigerate several hours or overnight. Just before serving, arrange stuffed cheese round, apples slices, and crackers on a tray.
