Crock pot chicken tortilla soup

1 can corn1 can black beans1 jar salsa1 can diced tomatoes with green chiles1 chicken breast1 c. prepared long grain brown riceshredded cheddar (optional, for garnish)tortilla chips (optional, for garnish)
Combine the corn, beans, salsa, and tomatoes in the crock pot. Add the chicken breast and submerge. Cook at low for 6 to 8 hours. One hour before you're ready to serve, remove chicken breast from pot and shred. Add uncooked brown rice. Allow to cook for another hour. Serve with crumbled tortilla chips and cheese on top.
