Potato Soup

Ingredients
2 Medium potatoes, peeled and cubed2 cups low sodium, fat free chicken broth1 packet of country gravy mix
Directions
Cut 2 potatoes and cover with water. Bring to boil and continue to boil until potates start to soften. Pour out water and add 2 cups chicken broth and return to low heat. Slowly add gravy mix and stir until well blended and no lumps from the gravy mix. Top with scallions, bacon and/or fat free cheese if desired.
